大米作为我国主要粮食,在高温高湿条件下储藏易霉变、陈化从而严重影响其食用品质和粮食安全。研究显示Ag/TiO2纳米复合包装储藏大米具有防霉保鲜作用,但其具体防霉抗菌机理还未见报道;同时Ag/TiO2常规合成方法工艺复杂、成本高;由于Ag+化学性质活泼易转变氧化银或单质银而流失到环境中,造成抗菌性能下降。针对这些问题,本研究将1)利用强静电吸附理论,改变TiO2表面电荷特性,使银离子基团单层分散在TiO2表面,并将Ag+均匀分布于TiO2晶格缺陷中,提高Ag化学稳定性,研制出长效、稳定的抗菌剂;2)研究含Ag/TiO2复合包装材料在大米储藏中对包装内环境气氛影响及大米品质变化规律,揭示其防霉保鲜作用;3)重点研究Ag在抗菌过程中的形态变化及迁移规律,以及抗菌有效因子的判定,阐明在大米防霉中的主导抗菌机制。为利用纳米包装储藏大米防霉保鲜提供理论基础和技术策略。

Rice, as the staple food in our country, is easy to mildew in hot and humid conditions, which severely reduce its eating quality and security. Recently, it is reported that nano-Packaging with inorganic antibacterial compounds was used for rice storage. However, the antibacterial mechanism is not clear. And also, the traditional methods for Ag/TiO2 preparation are complicated and expensive. The silver ions are easy to be changed to silver oxide or silver metal, which will migrate to environment and decrease the antibacterial performance. In order to solve these problems, this study will focus on the following three parts : 1) To increase the stability and performance of the inorganic antibacterial compounds, an efficient method for preparing highly dispersed Ag/TiO2 will be designed using Strong Electrostatic adsorption, which changes the surface charge of TiO2, homogenously disperses Ag+ on TiO2 surface and into their lattice defects; 2) Antibacterial effect of Ag/TiO2 nano-Packaging with inorganic antibacterial agents on rice storage will be studied by analyzing the internal atmosphere and rice quality variations; 3) The morphology and migration of Ag, as well as the antibacterial mold will be analyzed for clarifying the antibacterial mechanism. The findings will provide a theoretical contribution and technical strategies for rice storage using nano-Packaging.
